They are just soooooo pretty! And they make this easy vinaigrette go from simple to seasonally spectacular.
This vinaigrette can work on any kind of salad that you are in the mood for, from romaine to kale. And it is especially delicious with goat cheese if that is your thing.
Blood Orange Vinaigrette
makes about 1 cup
1/2 cup blood orange juice
2 TBSP red wine vinegar
2 teas dijon
1 teas shallot, minced
2 teas honey
1/2 cup olive oil
salt and pepper
Combine blood orange juice, vinegar, dijon, shallot and honey. Whisk or blend ingredients while slowly adding olive oil to combine. Taste and season with salt and pepper.
