Caramelized Onion and Thyme Tart

This tart will be a great side dish to any holiday brunch or dinner. It is simple and full of flavor…just what everyone needs during this busy season.

1 pie crust

1 small yellow onion,  sliced

2 tbsp butter

3/4 cup ricotta

2 tbsp thyme

1/2 cup feta

olive oil


Preheat oven to 350 degrees

Melt butter in pan and add onions. Add a couple big pinches of salt. Cook over medium-low heat until caramelized (about 20 – 30 minutes)

Place pie dough in cast iron skillet, pie pan or tart pan. Drizzle with olive oil

Mix ricotta with 1 tbsp thyme and spread on dough, leaving a small rim

Drizzle with olive oil. Layer caramelized onions, feta and half the remaining thyme

Bake for 20 – 25 minutes until dough is crisp and feta is golden brown

Top with remaining thyme, drizzle with more olive oil, slice and enjoy
