cherry and walnut chicken salad
makes 6 -8 lunch time servings
2 chicken breast, cooked and shredded
1 cup walnuts, chopped
1 cup dried cherries, chopped (you can use dried cranberries or raisins if you want but the cherries are delicious)
3 stalks celery, diced
1/4 – 1/2 small red onion, diced, adapt to your preference
1 cup plain greek yogurt
2 tbsp dijon or spicy mustard
salt and black pepper
Cook chicken. I poached my chicken in boiling water with some herbs that were near death and salt for about 20 minutes depending on the size of the breasts. You don’t need the herbs but any extra flavor helps. You can easily use grilled or baked chicken for this salad. Shred your cooked chicken and allow to cool.
I used a food processor for all the chopping and it made everything super easy but you can also get a good work out in doing it by hand.
Mix all ingredients and season with salt and pepper liberally. Enjoy!
