Spring is here and summer is coming! This is such an exciting time for produce, especially rhubarb which has a short season. The berries are finally ripening as well, for a sweet addition to this dessert.
A galette is just a fancy French word for what is basically rustic pie. You don’t have to worry about a pie pan and you can make them sweet or savory! They are so easy to make, they are perfect for a laid back weekend dessert that will surely impress your friends.
I used a mixture of raspberries, blueberries and rhubarb for these galettes. You can easily substitute your favorite fruit! I love to make peach galettes as we get later in the summer.
Mixed Berry and Rhubarb Galette
makes 2 galettes
2 pre-made pie crust (1 box)
2 cups mixed berries
1 cup chopped rhubarb
1/3 cup sugar
1 TBSP cornstarch
1 egg, beaten
Preheat oven to 350 degrees.
Toss berries, rhubarb, sugar and cornstarch together in bowl.
Lay out 2 pie crusts on parchment paper. Evenly pile fruit mixture in the middle of each pie crust leaving about a 1 1/2″ – 2″ border.
Fold pie crust edges over the berries and then over each other like a fan.
Brush pie crust with beaten egg and bake until golden brown, about 20 – 30 min.
