There are a lot of peanut butter cookies out there with jelly. And while those are delicious, that is not what THESE cookies are.
These are soft peanut butter cookies with dried strawberries and cranberries so they actually have the flavor of PB&J in a classic cookie!
I see freeze dried fruit at all different stores now. They are a seemingly “healthy” snack and a great ingredient to add to cereal, oatmeal or COOKIES.
The dried strawberries give these cookies a great hint of sweetness and the dried cranberries are a pop of tart.
The texture of these cookies though may be my favorite part! The peanut butter cookies are perfectly complimented with the chewy dried cranberries and actually chewy strawberries once they are baked! It is a PB&J flavor and texture explosion! I never thought I would be saying that about cookies. They are that good!
Peanut Butter and Jelly Cookies
makes about 2 dozen
1/2 C creamy peanut butter
1/2 C brown sugar
1/2 C sugar
1/2 C butter, softened
1 teas vanilla
1/2 teas baking soda
1/2 teas baking powder
1 1/4 C flour
1/2 C dried strawberries, broken into small pieces
1/2 C dried cranberries
Preheat oven to 350 degrees.
With a mixer, cream together peanut butter, butter, brown sugar, sugar, and vanilla. Add egg.
Slowly add baking soda, baking powder and flour to batter until combined.
Stir in strawberries and cranberries by hand.
Form dough into balls and place on parchment paper or greased cookie sheet. Bake for 9 – 13 min, depending on size, until set and very slightly browned. Store in airtight container.
