That’s right. I said seven layer SALAD.
As I was thinking about football food for the final week of the season I thought about beloved seven layer dip. Who does not love seven layer dip?! Even if you aren’t a huge fan of beans or maybe you don’t like guacamole, seven layer dip is still the perfect combination of flavors that everyone loves it.
Now…imagine that dip as a salad?!? Finally a new twist on a classic favorite that I can get behind and I don’t think I’m the only one. You could still serve this salad to a crowd or as a side salad for your family of four on taco night! Grill up some chicken or steak and I think you have yourself an irresistible entree salad.
Seven Layer Southwest Salad with avocado cilantro dressing
makes 4 side salads
1 head romaine
1/2 cup black beans
1/2 cup corn
1/2 cup diced tomatoes
1/2 cup cheddar cheese
1 bunch green onions
3 corn tortillas (or premade salad topper tortilla strips)
1/2 ripe avocado
1/2 bunch of cilantro
1 clove garlic
Layer or mix romaine, black beans, corn, tomatoes, cheese and green onions.
Cut tortillas in half and into thin strips. Fry in a small pan of oil over medium heat until crispy. Dry on paper towel and sprinkle with salt…OR you can buy the premade fried tortillas strip salad toppers at the grocery store.
Place avocado, juice of 1 lime, cilantro and garlic in blender or food processor. Blend until all ingredients are combined. Taste and season with salt and pepper. Blend again and slowly add in water until dressing reaches desired consistency. Taste again for final seasoning.
Toss salad with dressing and top with crunchy tortilla strips!
