In case you have not heard, it is officially summer! Even if you haven’t had a chance to pack up the car and head out camping yet, you can still start this weekend off with a spin on a summer classic!!
You don’t always have to have a campfire for s’mores. These cookies are the real deal!
There is actual graham cracker in the cookie batter and it is topped with a gooey marshmallow and some classic hershey’s chocolate. Your summer inner cookie monster wants you to make these asap!
makes about 24 cookies
10 TBSP butter, softened
1 C brown sugar
1 teas vanilla extract
1 1/4 C flour
1/2 C ground graham cracker
3/4 teas baking soda
1/2 teas salt
24 large marshmellows
24 hershey’s kisses or pieces of chocolate
Preheat oven to 375 degrees.
Beat together butter and sugar. Add egg and vanilla extract.
Slowly add dry ingredients.
Form dough into 1 1/4 inch balls and place spread out on cookie sheet.
Bake for 9 – 10 min until cookies are just set. Top each cookie with a marshmallow. Return to oven for 1 – 2 minutes until marshmallow have started to soften.
Remove from oven and top with chocolate kiss. Allow to cool slightly. Garnish with left over graham cracker crumbles if desired. Enjoy!
