Toasted Coconut and Dried Fruit Granola

Proceed with caution…this granola is ADDICTING! It is also so easy that you will find yourself making it over and over.

If you are one of my personal chef clients, you have probably already had this granola and everyone gives it great reviews!

This granola is the PERFECT combination of sweet and salty. You can eat it with yogurt, with milk like cereal, in a smoothie bowl…or my preferred method of literally shoveling in my mouth!!!

You can without doubt eat it for breakfast, lunch, snack, dessert!?! It is always satisfying. It also makes the house smell absolutely amazing, so that is an extra little bonus.


Toasted Coconut and Dried Fruit Granola

makes 1 sheet pan (13×18)


2 C           oats

1 C            shredded coconut flakes, sweetened (unsweetened if you want a little healthier)

1 C            slivered almonds

1/2 C        cashews*

1/2 C         shelled pistachios*

6 T             oil

1/4 C         honey

1/2 teas     salt

1/2 C         golden raisins*

1/2 C         dried cranberries*

*any of these nuts are dried fruit can be substituted with your favorites…whole almonds, peanuts, dried apricots, dried figs, the possibilities are endless!


Preheat oven to 325 degrees. Spray cooking sheet with non-stick spray.

Mix all ingredients except dried fruit (golden raisins and dried cranberries). Spread mixture evenly on baking sheet.

Bake 10 min. Remove from oven, stir and redistribute evenly on baking sheet.

Check after another 10 min and stir again.

Continue to bake for another 5 – 10 minutes, checking until golden brown.

Stir dried fruit into granola while warm. Store in airtight container.
