The best part of winter…in dessert form!!
In my opinion, the greatest produce to come out of winter is all of the amazing grapefruits and oranges and lemons and limes!! The citrus is sooooo juicy and sweet and tart.
I also happen to love traditional lemon bars. As in, they are a top 2 favorite dessert of all time.
And that leads me to this recipe. You can honestly make these bars with any kind of citrus you want. Feeling lemon lime? Go for it. Blood orange and lemon? Sounds awesome. It will even work as a traditional lemon bar recipe. Keep in mind, the lemon and lime bars might be a little more tart and the grapefruit or orange, a little more sweet.
These bars are so easy too! The crust has 3 ingredients?! No making a curd or tempering the eggs. Just get ready to juice some citrus!
Winter Citrus Grapefruit Bars
makes 9 x 13 pan
1 3/4 C flour
1/2 C powdered sugar
1 C melted butter
1 1/2 C sugar
3/4 C citrus juice (for these I used a combo of about 1 grapefruit and 1 lemon)
1/4 t salt
powdered sugar for topping
Preheat oven to 350 degrees. Combine flour, powdered sugar and melted butter in bowl. Press batter into 9 x 13 pan lined with parchment paper. I used the bottom of a glass sprayed with pam to evenly press down batter. Bake for about 20 minutes until slightly browned.
Mix together sugar, eggs, citrus juice and salt. Once the crust has baked, pour filling on top of crust. Return to oven for another 15 – 20 minutes until middle is set and not jiggly.
Allow to cool for 10 minutes and then dust with powder sugar. Refrigerate for at least 2 hours or overnight for easy cutting.
